Ingredients

  • 8 handfuls of rocket (arugula)
  • 200g (7oz) good ripe blue cheese, broken up by hand into big rough pieces
  • 50ml (2fl oz) good extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • Sea salt and freshly-ground black pepper to taste
  • Dinner party optional extra – two ripe pears with the skin on for your guests (you skip)

Method

  1. Mix up your dressing using the balsamic vinegar, salt, pepper, and oil
  2. Place rocket onto a large plate.
  3. If using the pear for your dinner guests, arrange the thinly-sliced pears on the rocket.
  4. Arrange the blue cheese chunks on the rocket.
  5. Drizzle dressing over the salad and serve immediately.
