Ingredients

  • 500g (1lb) cooked chicken, cooled and diced
  • 2 cups of seedless red grapes, halved
  • 1/2 cup walnuts, roughly chopped
  • 1 medium stalk of celery, chopped
  • 1/2 cup mayonnaise
  • 2 tbsp dijon mustard
  • 1 tbsp apple cider vinegar
  • 2 tbsp chives, minced
  • Extra chives for garnish

Method

  1. Add cooked chicken, two cups of grapes, half a cup of walnuts, roughly chopped, and one stalk of celery, chopped, to a bowl, and mix. Set aside.
  2. To make the dressing, whisk half a cup of mayonnaise with two tablespoons of dijon mustard, one tablespoon of apple cider vinegar and two tablespoons of minced chives.
  3. Add to chicken, stir to mix and coat all ingredients.
  4. Serve. Can be served from the fridge.
