Ingredients
- 500g (1lb) cooked chicken, cooled and diced
- 2 cups of seedless red grapes, halved
- 1/2 cup walnuts, roughly chopped
- 1 medium stalk of celery, chopped
- 1/2 cup mayonnaise
- 2 tbsp dijon mustard
- 1 tbsp apple cider vinegar
- 2 tbsp chives, minced
- Extra chives for garnish
Method
- Add cooked chicken, two cups of grapes, half a cup of walnuts, roughly chopped, and one stalk of celery, chopped, to a bowl, and mix. Set aside.
- To make the dressing, whisk half a cup of mayonnaise with two tablespoons of dijon mustard, one tablespoon of apple cider vinegar and two tablespoons of minced chives.
- Add to chicken, stir to mix and coat all ingredients.
- Serve. Can be served from the fridge.
