Ingredients
- 8 handfuls of rocket (arugula)
- 200g (7oz) good ripe blue cheese, broken up by hand into big rough pieces
- 50ml (2fl oz) good extra virgin olive oil
- 1 tbsp balsamic vinegar
- Sea salt and freshly-ground black pepper to taste
- Dinner party optional extra – two ripe pears with the skin on for your guests (you skip)
Method
- Mix up your dressing using the balsamic vinegar, salt, pepper, and oil
- Place rocket onto a large plate.
- If using the pear for your dinner guests, arrange the thinly-sliced pears on the rocket.
- Arrange the blue cheese chunks on the rocket.
- Drizzle dressing over the salad and serve immediately.
