Ingredients
- 2 medium ripe tomatoes, finely diced
- 2 medium radishes, finely diced
- 3 inches of fresh cucumber, finely diced
- Handful of fresh coriander (cilantro), finely chopped
- Handful of finely-chopped spinach or kale
- Sea salt and freshly-ground pepper to taste
- Juice of half a lime
- A couple of dashes of chilli powder and paprika
- Half an habanero or jalapeƱo or serrano chilli, finely chopped, but be careful – heat develops the longer it sits, so only add a bit to taste, because you can always add more later
- 1 teaspoon of garlic-infused olive oil
Method
Combine all finely-chopped ingredients in a bowl and serve with whatever you like. Adjust chilli content to suit palate.
